Its very very hot!! So I think I keep making cold dishes. This month Esqueixada is a Catalan salad (exquixar) is Catalan for (“to tear”) and the main ingredient is Cod. Lets do it! Mayka x


  • 1 pound salt cod (desalted)
  • 1 yellow onion – sliced into very thick rings
  • 2 tomatoes diced 1 red bell pepper and green pepper cut into strips
  • 1/2 cup of black olives
  • 2/3 cup of sherry vinaigrette

Let’s Start!

Tear the cod into small pieces. In a bowl, combine the cod and onion, and pour in the olive oil to cover. Refrigerate for 1 hour. Drain the cod and onion and transfer to a large bowl. Add the tomatoes, the peppers, olives and mix well. Drizzle with vinaigrette and toss to coat. Cover and refrigerate. Serve very cold. Enjoy xxx
