White Beans with Clams

What a winter we are having this year! Cold, rain & snow! We keep going with the hot dishes I think. All we want is a lovely and hot bowl of soup and this month I have chosen a very typical dish from a Basque country.


Ingredients
250gr white beans (fabes) soaked overnight
1 onion – peeled & halved
1 ripe tomatoe
parsley
1/2 carrot – peeled
20 clams
60ml extra virgin olive oil
salt

Drain the beans and simmer them very gently for 2 hours with the onion, tomatoe, carrot and parsley in enough water to cover everything. Every 10-15 minutes add a little water to make sure the beans are always covered. Put a little bit water in a different pan and steam the clams until open. Remove them as soon as they open. Strain the liquid and put it aside. When the beans are cooked, removed the vegetables and blend the vegetables together in a blender. Add the blended mixture to the beans. Add olive oil and season with salt. Stir and leave the beans cook gently for another 5-8 minutes. Serve very hot & enjoy!
