Christmas!!!

I can’t believe it’s December already! The year has gone by so fast!! I would like to wish all of you a Merry Christmas and Happy New Year. And thank you all so much for reading and trying out my recipes. I love it when you come in and tell me. Christmas in Spain is different. We like to share starters like ham and cheese platters and grilled prawns followed by soup and roast lamb or other meat, and at the end our sweeties. Our recipe is Marisco soup. Ingredients:

  • 650 gr raw prawns
  • 500 gr mussels
  • 1 litre water
  • 2 bay leaves
  • 1 tablespoon
  • olive oil
  • 3 shallots chopped
  • 1 bell pepper chopped
  • 1 garlic glove minced
  • 2 tomatoes chopped
  • salt and pepper
  • chopped parsley

Let’s Start!

Peel the prawns and place them to one side. Put the heads and shells in a pan with water add 2 bay leaves and simmer for 20 minutes to make stock. Heat the olive oil in a pan and fry the shallots and bell pepper until soft then add the garlic and cook for 2 minutes. Strain the stock into the pan with the shallots and bring to the boil. Add 2 tomatoes, prawns and mussels to the soup and simmer for 10 minutes. Add the paprika salt and pepper to taste. Garnish with parsley. Serve hot and with crusty bread. Hope you enjoy.
