Gazpacho Andaluz
Hi All. This month I have the best recipe for keep us cold as the weather is getting hot. Gazpacho Andaluz Spanish cold soup. I know it sounds weird for some of you but an advice for you – don’t think is a cold soup! Think in a refreshing tomato and vegetable juice.
Ingredients
1 kg of ripe tomatos
2 small green peppers
2 garlic cloves
100 gr of bread
4 tbsp extra olive oil
1 tbsp of sherry vinegar
Water
Boiled egg
Bread and salt
- Let’s Start!
- Soak the bread in water and then crush with the diced vegetables, oil, water, vinegar and salt according to how thick you want your juice.
- Serve as a soup or just do as I do – a glass of the juice every afternoon.
- It can be in the fridge for a week and gets better with time.
