Gazpacho Andaluz

Hi All. This month I have the best recipe for keep us cold as the weather is getting hot. Gazpacho Andaluz Spanish cold soup. I know it sounds weird for some of you but an advice for you – don’t think is a cold soup! Think in a refreshing tomato and vegetable juice.

1 kg of ripe tomatos
2 small green peppers
2 garlic cloves
100 gr of bread
4 tbsp extra olive oil
1 tbsp of sherry vinegar
Boiled egg
Bread and salt

  1. Let’s Start!
  2. Soak the bread in water and then crush with the diced vegetables, oil, water, vinegar and salt according to how thick you want your juice.
  3. Serve as a soup or just do as I do – a glass of the juice every afternoon.
  4. It can be in the fridge for a week and gets better with time.
