Porrusalda

Hi All, spring is here! This month is Easter and in Spain it is traditionally fish on Fridays. Our recipe is from the Basque country “porrusalda”. Leek and potato stew with cod.


Ingredients
300 gr unsalted cod chopped or sliced
2 leeks
2 large potatoes
2 carrots
3 garlic cloves
1 onion
Virgin olive oil
Paprika
Salt

  1. Put the cod in sauce pan with cold water. Once the water boils remove from heat and drain the cod.
  2. In the meanwhile pour a little olive oil in a sauce pan, add the leeks, the finely chopped onion and fry until golden brown. Add diced potatoes, carrots and the water in which the cod was boiled in. Let it simmer on low heat.
  3. Once the potatoes are tender, add the cod and let it cook again. While the broth is cooking, stir-fry the garlic cloves and add to the soup along with the paprika when it’s ready to serve.
