Estofado de Calabazin

Hello everyone hope you all had a lovely Easter holidays. Good weather is coming a many of us want to get in shape for the beach time. So, I have a light and healthy recipe from my mum using the spring vegetables. Suitable for vegans (without eggs).


Ingredients
1kg courgettes
1/2 kg green peppers
2 Aurbegines
1 kg tomatoes
2 garlic cloves
1/2 kg potatoes
2 eggs
1 glass of olive oil

  1. Let’s Start!
  2. Put an olive oil in a frypan. Chop the onions and fry them until golden brown. Cut the peppers into strips and add to onions.
  3. Peel the tomatoes and add them to the frypan.
  4. Also add the courgettes, potatoes and aubergines cut into cubes.
  5. Add chopped garlic.
  6. Fry for few minutes, then add a glass of water and simmer until cooked. Serve in a ceramic pot with fried or boiled eggs.
